Yummy Yummy Mock Eel Made with shitake mushrooms and tossed in a soy reduction glaze
Petit Soup Bowls Fresh and delightful gazpacho in salt and pepper rimmed mini glasses
Sweet Corn Fritters Fresh corn and cornmeal fritters served with a lightly herbed aioli
Spanikopita triangles Spelt filo filled with organic spinach and feta, and summer garden herbs.
Melon Balls Assorted melon balls, some scented with ginger, mint, or honey
Stationary Appetizers Vermont Ploughman’s Platter Featuring Lazy Lady Goat Cheese A selection of Vermont’s best organic cheeses served with an assortment of small batch jams and chutneys, breads and crackers.
Summer Vegetable Showcase and Dip Duo An abundance of local produce featuring the season’s best flavors . This Platter is accentuated by little piles of fresh organic Dolmas, Hot Artichoke and Spinach Dip, and a cool White Bean and Sage dip drizzled with olive oil and served with breads.
Local Salad Plate (plated and served to seated guests) Featuring organic greens, cucumbers and cherry tomatoes. The flavors of this salad are accented by a few sprinkles of dried cranberries, fresh organic blueberries, and tamari roasted sunflower seeds, and a light and cheerful maple balsamic dressing. This salad is served with spelt bread and new potatoes tossed in ume scallion dressing (the bride’s favorite!).
Dinner Buffet Mains (please choose one) Vegetarian Spelt Filo Purses Layers of spelt filo filled with organic vegetables and served with a bright roasted tomato sauce.
White Wine and Balsamic Grilled Wild Salmon Wild Salmon grilled and drizzled with a white wine and balsamic reduction. The fish is then topped with maple caramelized onions.
